Ingredients:

For the Nachos:

  • 1 bag of tortilla chips
  • 1 cup of Almond Delight Chednut cheese, shredded
  • 1 cup of Almond Delight Nutzarella cheese, shredded
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn kernels (fresh or frozen)
  • 1 jalapeño, sliced
  • 1 avocado, diced
  • 1/4 cup of diced red onions
  • 1/4 cup of chopped fresh cilantro
  • Salsa and/or guacamole for serving

 

For the Cheese Sauce:

  • 1 cup of Almond Delight Nutzarella cheese, shredded
  • 1/2 cup of Almond Delight Gounut cheese, shredded
  • 1/2 cup of unsweetened almond milk
  • 1 tbsp of nutritional yeast
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • Salt and pepper to taste

 

Instructions:

   1. Prepare the Cheese Sauce:

  • In a small saucepan, combine Almond Delight Nutzarella and Gounut cheeses with almond milk.
  • Cook over medium heat, stirring constantly, until the cheese is fully melted and the mixture is smooth.
  • Add nutritional yeast, garlic powder, onion powder, salt, and pepper. Stir well to combine. Set aside.

   2. Assemble the Nachos:

  • Preheat your oven to 350°F (175°C).
  • Spread the tortilla chips evenly on a large baking sheet.
  • Sprinkle the black beans and corn evenly over the chips.
  • Drizzle half of the cheese sauce over the nachos, ensuring an even distribution.
  • Add another layer of tortilla chips, black beans, and corn.
  • Drizzle the remaining cheese sauce over the top layer.
  • Sprinkle shredded Chednut and Nutzarella cheeses on top.
  • Add sliced jalapeños for a spicy kick.

  • Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
