Vegan Dulce Nut de Leche Pancakes
Ingredients:
For the Pancakes:
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups almond milk (or any plant-based milk)
- 2 tablespoons melted coconut oil (or any neutral oil)
- 1 teaspoon vanilla extract
- 1/2 cup Vegan Dulce Nut de Leche (plus more for drizzling)
- 1/4 cup of chopped fresh cilantro
- Salsa and/or guacamole for serving
For Serving:
- Fresh fruit (bananas, berries, etc.)
- Chopped nuts (optional)
- Additional Vegan Dulce Nut de Leche
Instructions:
1. Mix the Dry Ingredients:
In a large mixing bowl, whisk together 1 1/2 cups flour, 2 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
2. Combine Wet Ingredients:
In another bowl, mix 1 1/4 cups almond milk, 2 tablespoons melted coconut oil, and 1 teaspoon vanilla extract until well combined.
3. Make the Pancake Batter:
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
Gently fold in 1/2 cup Vegan Dulce Nut de Leche, creating a marbled effect in the batter.
4. Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat. Lightly grease with a little coconut oil.
Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown, about 2-3 minutes per side.
5. Serve:
Stack the pancakes on a plate and drizzle with additional Vegan Dulce Nut de Leche.
Add fresh fruit and chopped nuts if desired.
